Mayonnaise Mixture

  • 6 tbsp. mayonnaise

  • 1 scallion, sliced
  • 1 clove garlic, grated

Wrap Fillings

  • 4 (10″) flour wraps
  • 1 1/2 oz. packed baby spinach or arugula (about 1 1/2 cups), divided
  • 2 cups cooked chopped rotisserie chicken (about 8 oz.), divided
  • 4 oz. cherry tomatoes, quartered, divided
  • 4 oz. fresh mozzarella, sliced, divided

Instructions

  1. Prepare the mayonnaise mixture: In a small bowl, combine the mayonnaise, chopped fresh basil, sun-dried tomatoes, grated Parmesan, oregano, sliced scallion, and grated garlic. Stir until all ingredients are well mixed and form a flavorful spread.
  2. Assemble the wraps: Lay one flour wrap flat and spread one-quarter of the mayonnaise mixture evenly over the surface, leaving a 1-inch border around the edges to prevent spilling when rolling.
  3. Add the fillings: On top of the spread, layer one-quarter of the baby spinach or arugula, half a cup of chopped rotisserie chicken, 1 ounce of quartered cherry tomatoes, and 1 ounce of sliced fresh mozzarella. Distribute ingredients evenly for balanced flavor in every bite.
  4. Roll the wrap: Fold in the sides of the wrap to seal the filling, then tightly roll the bottom edge away from you towards the top, keeping the sides tucked in to form a burrito-like shape. This prevents the filling from falling out.
  5. Repeat assembly for remaining wraps: Follow steps 2 through 4 for each of the remaining wraps with the remaining ingredients.
  6. Serve: Slice each filled wrap in half diagonally and serve immediately or wrap tightly in foil for later consumption. These wraps are delicious served cold or at room temperature.
