Ingredients

Scale

Filling

  • 2 cups smoked brisket, chopped
  • 8 oz cream cheese, softened
  • 4 jalapeños, diced
  • 1 cup shredded cheddar or pepper jack cheese
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Egg Rolls

  • 12 egg roll wrappers
  • 1 egg, beaten (for sealing)
  • Oil for frying

Spicy Honey Drizzle

  • ½ cup honey
  • 1 jalapeño, thinly sliced

Instructions

  1. Prepare Filling: In a mixing bowl, combine chopped smoked brisket, softened cream cheese, shredded cheese, diced jalapeños, minced garlic, onion powder, smoked paprika, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
  2. Assemble Egg Rolls: Lay an egg roll wrapper flat and place about 2 tablespoons of the prepared filling in the center. Fold the corners inward, roll the wrapper tightly around the filling, and seal the edges with the beaten egg to ensure they won’t open during frying.
  3. Heat Oil: Heat oil in a deep pot or fryer to approximately 175°C (350°F), checking temperature with a thermometer for accurate frying conditions.
  4. Fry Egg Rolls: Carefully place the assembled egg rolls into the hot oil in batches, frying for 2-3 minutes per side until golden brown and crispy. Remove them from the oil and drain on paper towels to absorb excess oil.
  5. Prepare Spicy Honey: In a small saucepan, gently warm the honey with the thinly sliced jalapeño over low heat for about 5 minutes to infuse the spicy flavor into the honey without boiling it.
  6. Serve: Drizzle the warm spicy honey over the hot egg rolls and serve immediately. Optionally, provide ranch or BBQ sauce on the side for dipping to complement the flavors.

Notes

  • Adjust the number of jalapeños based on your preferred spice level.
  • Use a thermometer to maintain the oil at the correct frying temperature to avoid greasy egg rolls.
  • Serve the egg rolls immediately for the best crispy texture.
  • For a milder honey drizzle, remove the jalapeño slices after warming or reduce their amount.
  • Leftovers can be reheated in an air fryer for crispiness but are best enjoyed fresh.
