Ingredients

Scale

Marinade and Shrimp

  • 1 garlic clove
  • 1 teaspoon salt
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • Black pepper, to taste
  • 1 ½ pounds peeled shrimp

For Serving

  • Chopped tomatoes, for serving
  • Crumbled feta, for serving

Instructions

  1. Preheat the broiler: Turn on the broiler and position the oven rack close to the heat source to ensure quick and even cooking of the shrimp.
  2. Prepare the garlic paste and marinade: Mash the garlic clove with salt until it forms a smooth paste. Then, add chopped oregano, lemon juice, olive oil, and a generous amount of black pepper. Mix well to create the marinade.
  3. Marinate the shrimp: Rub the garlic and oregano paste all over the peeled shrimp, ensuring each piece is coated evenly for maximum flavor.
  4. Broil the shrimp: Spread the marinated shrimp out in a single layer on a sheet pan. Broil the shrimp for 2 to 3 minutes on each side until they are just cooked through and slightly charred at the edges.
  5. Serve: Remove the shrimp from the oven and top with chopped tomatoes and crumbled feta cheese. Serve immediately while warm.

Notes

  • Be careful not to overcook the shrimp—they cook quickly under the broiler and can become tough if left too long.
  • Fresh oregano is highly recommended for the best flavor, but dried oregano can be used in a pinch (use about 1 teaspoon dried).
  • Serve with crusty bread or over a bed of greens for a complete meal.
  • You can substitute lemon juice with fresh lemon zest for a more intense citrus aroma.
  • Adjust the amount of black pepper according to your preferred spice level.
