Instructions

  1. Preheat and prep: Position a rack in the center of the oven and preheat to 425ºF (220ºC). On a large sheet pan, combine the roughly chopped bell peppers, fresh gnocchi, and minced garlic. Toss everything with 2 tablespoons of the extra-virgin olive oil, a generous pinch of kosher salt, freshly ground black pepper, and crushed red pepper flakes until evenly coated.
  2. Roast the ingredients: Place the sheet pan in the preheated oven and roast for about 30 minutes, stirring and tossing the mixture halfway through cooking. Roast until the bell peppers are completely softened and the gnocchi are golden brown and slightly crispy on the edges.
  3. Add burrata and basil: Remove the sheet pan from the oven and immediately top the roasted vegetables and gnocchi with torn burrata pieces and fresh basil leaves for a fresh burst of flavor.
