Ingredients

Scale

Green Goddess Dressing

  • 1 garlic clove, peeled, sliced
  • 1 cup fresh basil
  • 1 cup fresh parsley
  • 1/2 cup fresh dill fronds
  • 1/4 cup chives, sliced into 1” to 2″ pieces
  • 1/2 cup Greek yogurt, preferably 2% fat
  • 1/2 cup mayonnaise
  • 2 tbsp. fresh lemon juice
  • 2 tsp. kosher salt, divided

Chicken

  • 2 lb. boneless, skinless chicken thighs (6 to 8 pieces)
  • Neutral oil, for grill

Instructions

  1. Prepare the Dressing: In a food processor, pulse garlic, basil, parsley, dill, and chives until finely chopped. Add Greek yogurt, mayonnaise, lemon juice, and 1/2 teaspoon of kosher salt, then process again until the mixture is smooth and well combined, forming the Green Goddess dressing.
  2. Marinate the Chicken: Place the chicken thighs in a large bowl and sprinkle with the remaining 1 1/2 teaspoons kosher salt. Add 1/2 cup of the prepared Green Goddess dressing to the chicken and gently toss until the thighs are evenly coated. Reserve the remaining dressing for serving.
  3. Preheat and Prepare the Grill: Set up a grill for medium-high heat and preheat for about 5 minutes. Clean the grill grates thoroughly and oil them lightly with neutral oil to prevent sticking.
  4. Grill the Chicken: Place the marinated chicken thighs on the grill. Grill for 11 to 14 minutes total, turning halfway through, until the chicken is slightly charred, cooked through, and an instant-read thermometer inserted into the thickest part reads 165°F (74°C).
  5. Serve: Transfer the grilled chicken to a platter and top with the reserved Green Goddess dressing. Serve immediately while hot and flavorful.
  6. Make Ahead Tips: The Green Goddess dressing can be prepared up to one day in advance and stored in an airtight container in the refrigerator. Uncooked chicken can be tossed with 1/2 cup of the dressing and refrigerated for up to 2 hours prior to grilling.

Notes

  • Use an instant-read thermometer to ensure the chicken is safely cooked to 165°F.
  • Marinating the chicken even for a short time enhances flavor and tenderness.
  • For extra char, finish with a quick 1-2 minute sear on each side over high heat.
  • Can substitute chicken breasts if preferred, adjusting cooking time accordingly.
  • Store leftover dressing refrigerated and use as a dip or salad dressing within 2 days.
