Instructions

  1. Prepare Pan: Line a 9×13-inch pan with parchment paper, allowing the paper to extend above the edges for easy fudge removal later.
  2. Combine Ingredients: In a large saucepan over medium heat, add granulated sugar, unsalted butter, and evaporated milk. Stir consistently using a wooden or silicone spatula until the butter has completely melted.
  3. Boil Mixture: Bring the mixture to a boil while stirring constantly to prevent burning. Continue boiling and stirring until the temperature reaches 234°F (soft-ball stage) on a candy thermometer, which takes approximately 4-5 minutes.
  4. Add Chocolate: Remove the pan from heat and stir in the semi-sweet chocolate until fully melted and the mixture is smooth.
  5. Incorporate Fluff and Walnuts: Stir in the marshmallow fluff, chopped walnuts (if using), and vanilla extract until everything is well combined and smooth.
  6. Set the Fudge: Pour the fudge mixture into the prepared parchment-lined pan. Allow it to cool and firm at room temperature for about 4 hours. To speed up the setting process, you may place the pan in the refrigerator.
