Chicken Fritters
- 1 ½ lbs chicken breasts (3 large)
- 2 large eggs
- ⅓ cup mayonnaise
- ⅓ cup all-purpose flour (or cornstarch or potato starch for gluten free)
- 4 oz mozzarella cheese (1 ⅓ cups shredded)
- 1 ½ tablespoon chopped fresh dill
- ½ teaspoon salt (or to taste)
- ⅛ teaspoon black pepper
- 2 tablespoon extra light olive oil (or any high heat cooking oil) for sautéing
Garlic Aioli Dip (Optional)
- ⅓ cup mayonnaise
- 1 garlic clove, pressed
- ½ tablespoon lemon juice
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- Prepare Chicken: Using a sharp knife, dice the chicken breasts into approximately ⅓-inch thick pieces. Placing the chicken in a large mixing bowl makes it easy to mix with other ingredients. Tip: Slightly freezing the chicken helps with easier slicing.
- Mix Batter: To the bowl with chicken, add 2 eggs, ⅓ cup mayonnaise, ⅓ cup flour (or alternative starch for gluten free), shredded mozzarella cheese, chopped fresh dill, salt, and pepper. Stir well until all ingredients are thoroughly combined. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight to let the flavors meld and batter firm up.
- Heat Oil: Warm a large non-stick pan over medium heat and add 2 tablespoons of extra light olive oil or another high-heat suitable oil. Ensure the oil is hot before cooking the fritters.
- Cook Fritters: Using a heaping tablespoon, scoop the chicken mixture into the hot pan. Slightly flatten the tops with the back of the spoon. Cook uncovered for 3–4 minutes on the first side until golden brown, then carefully flip and cook for another 3 minutes. Continue cooking until the fritters are golden on both sides and the chicken is fully cooked through. Add more oil as needed and repeat with the remaining batter.
- Make Garlic Aioli Dip: In a small bowl or measuring cup, combine mayonnaise, pressed garlic, lemon juice, salt, and black pepper. Stir until smooth and well combined. Serve alongside the hot fritters.
Notes
- Partially freezing chicken breasts makes slicing easier and more uniform.
- Refrigerating the mixture before cooking helps the fritters hold together well.
- You can substitute mozzarella with another melting cheese if desired.
- For a gluten free version, use cornstarch or potato starch instead of flour.
- Use a non-stick skillet to prevent sticking and reduce the amount of oil needed.
- Serve these fritters warm for the best texture and flavor.
- The garlic aioli dip is optional but adds a savory brightness that complements the fritters.
