- Sauté Vegetables: In a large skillet, heat 1 tablespoon of extra-virgin olive oil over medium heat. Add the chopped onion and bell peppers. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes. Stir in the minced garlic and corn and cook for an additional 1 minute to meld the flavors. Remove the vegetable mixture from the skillet and transfer to a bowl.
- Cook Shrimp: Add the remaining 1 tablespoon of olive oil to the same skillet. Place the shrimp in a single layer and season generously with kosher salt, freshly ground black pepper, and Cajun seasoning. Cook the shrimp until they turn pink and opaque, about 1 to 2 minutes per side, flipping once for even cooking.
- Combine and Finish: Return the sautéed vegetables to the skillet with the shrimp. Stir in the lemon juice and toss gently to combine all the ingredients well and heat through. Remove from heat and garnish with freshly chopped parsley before serving.
