Buffalo Chicken Filling

  • 6 oz. cream cheese, softened
  • 6 tbsp. unsalted butter, melted
  • 1/3 cup hot sauce
  • 1 1/2 tsp. store-bought or homemade Cajun seasoning
  • 2 1/4 cups chopped rotisserie chicken (about 12 oz.)
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup blue cheese crumbles, plus more for serving
  • 4 tbsp. sliced chives, divided

Instructions

  1. Prepare Slaw: Preheat your oven to 450°F. In a small bowl, toss the grated carrot and thinly sliced celery with apple cider vinegar and a pinch of kosher salt. Set this mixture aside to marinate and develop flavor while you prepare the other components.
  2. Mix Filling: In a large bowl, combine softened cream cheese, melted unsalted butter, hot sauce, and Cajun seasoning. Stir vigorously until the mixture is smooth and completely blended. Then, fold in the chopped rotisserie chicken, shredded cheddar, blue cheese crumbles, and 3 tablespoons of sliced chives evenly throughout the mixture.
  3. Prepare Puff Pastry: Lightly flour your work surface and roll out the puff pastry sheet into a roughly 12 by 10-inch rectangle. Using a bench scraper or a sharp knife, cut the dough into 12 equal squares for the base of your bites.
  4. Assemble Bites: Spray a standard 12-cup muffin tin generously with cooking spray. Place one dough square into each muffin cup, pressing gently to line the bottom and sides. Spoon the buffalo chicken mixture evenly into each pastry cup, filling them generously.
