Ingredients

Scale

Main Ingredients

  • 4 cups broccoli florets
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup almond meal (or regular flour)
  • 2 large eggs, cracked and whipped
  • 1 garlic clove, minced
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • Pinch of pepper

For Cooking

  • Olive oil for cooking

Instructions

  1. Cook the broccoli on the stovetop: Bring a large pot of water to a boil. Add the broccoli florets and cook for 2 minutes until slightly tender. Drain the broccoli and let it cool until manageable.
  2. Or cook the broccoli in the microwave: Place broccoli florets in a microwave-safe bowl with 1 tablespoon of water. Microwave for 2 minutes, adding an extra minute if needed based on your microwave’s power. Allow to cool.
  3. Chop the broccoli: Once cooled, finely chop the broccoli into small, coarse grain-sized pieces to help create the right texture for the fritters.
  4. Prepare the fritter batter: In a large bowl, combine the chopped broccoli with shredded cheddar, almond meal (or flour), whipped eggs, minced garlic, paprika, salt, and pepper. Mix thoroughly until well combined.
  5. Heat the pan: Place a large skillet or pan over medium-high heat and add 1 tablespoon of olive oil, heating until shimmering.
  6. Form and cook fritters: Spoon approximately 1/4 cup of the batter into the pan per fritter. Flatten each with the back of the spoon to form a patty. Cook each fritter for 2 to 3 minutes on each side until golden brown and cooked through.
  7. Cook in batches: Avoid overcrowding the pan by cooking the fritters in batches. Add more olive oil between batches if necessary for even cooking.
  8. Serve or store: Serve the fritters warm as a tasty snack or side. Leftovers can be refrigerated for up to 3 days and reheated before serving.

Notes

  • You can substitute almond meal with regular flour if preferred.
  • Be sure not to overcrowd the pan to ensure even frying and crispiness.
  • For an extra kick, add a pinch of chili flakes or cayenne pepper to the batter.
  • These fritters freeze well – freeze on a baking sheet before storing in an airtight container.
  • Adjust microwave cooking time based on your appliance’s power to avoid overcooking broccoli.
