Berry Mixture

  • 1 ½ pounds fresh strawberries (washed, hulled and chopped)
  • 12 ounces fresh blueberries (washed and dried)
  • 12 ounces raspberries (washed and dried)
  • ¾ cup (155g) sugar
  • 4 tablespoons (60ml) amaretto liqueur (optional)
  • ¾ to 1 cup (180-240ml) water

Mascarpone Cream

  • 6 large egg yolks
  • 1 cup (207g) sugar
  • 1 ¼ cups (285g) mascarpone cheese
  • 1 ¾ cups (420ml) heavy whipping cream (cold)

Ladyfinger Layer

  • 1 package ladyfingers (17.5 ounce package)

Whipped Cream Topping

  • 1 ¼ cups (300ml) heavy whipping cream (cold)
  • ½ cup (58g) powdered sugar
  • 1 teaspoon vanilla extract

Optional Decoration

  • Freeze-dried berries (for powdering)

Instructions

  1. Make Berries and Juice Mixture: Combine the strawberries, blueberries, raspberries, and sugar in a large bowl. Gently toss until all the fruit is coated with sugar. Cover and refrigerate for 2-3 hours to allow the berries to release their juices.
  2. Prepare Berry Juice: After refrigeration, drain the juice from the fruit into a measuring cup. You should have at least 1 cup of juice; if not, let the berries sit longer. Stir in the amaretto liqueur if using, then add water until you reach 2 cups total liquid.
  3. Make Mascarpone Cream Base: In the top of a double boiler or metal bowl set over simmering water, whisk together egg yolks and 1 cup sugar. Heat while whisking vigorously for about 5 minutes until the mixture thickens, doubles in volume, becomes pale yellow, and reaches 160°F. Let cool to just above room temperature.
  4. Whip Cream: While eggs cool, whip 1 ¾ cups of cold heavy cream in a large bowl on high speed until stiff peaks form.
  5. Combine Mascarpone Cream: Gently fold mascarpone cheese into the cooled egg mixture until smooth. Then, carefully fold in the whipped cream in two batches until fully incorporated. Set aside.
  6. Assemble Layer One: Quickly dip each ladyfinger into the berry juice mixture for about 3 seconds. Arrange a single layer (around 24 ladyfingers in three rows) in the bottom of a 9×13-inch pan.
  7. Add First Berry and Cream Layers: Spread half of the mixed berries evenly over the ladyfingers, then spread half of the mascarpone cream over the berries to create the first creamy layer.
  8. Assemble Layer Two: Repeat the dipping of ladyfingers in berry juice and lay a second ladyfinger layer on top. Follow with the remaining mixed berries and finish by spreading the rest of the mascarpone cream on top.
  9. Chill: Refrigerate the assembled tiramisu for at least 3-4 hours or preferably overnight to allow flavors to meld and the dessert to set.
  10. Prepare Topping and Decoration: If using freeze-dried berries, grind them in a food processor to make a powder and sprinkle evenly over the tiramisu just before serving. Whip together the remaining 1 ¼ cups heavy cream with powdered sugar and vanilla extract until stiff peaks form. Pipe or spread the whipped cream over the tiramisu as decoration.
  11. Serve and Store: Serve chilled. Store leftovers covered in the refrigerator, best consumed within 24-48 hours to maintain texture and flavor.
