Berry Tiramisu Recipe
Introduction
Berry Tiramisu is a fresh twist on the classic Italian dessert, combining layers of juicy mixed berries with creamy mascarpone and delicate ladyfingers. It’s light, fruity, and perfect for spring or summer gatherings.

Ingredients
- 1 ½ pounds fresh strawberries, washed, hulled, and chopped
- 12 ounces fresh blueberries, washed and dried
- 12 ounces raspberries, washed and dried
- ¾ cup (155g) sugar
- 4 tablespoons (60ml) amaretto liqueur (optional)
- ¾ to 1 cup (180-240ml) water
- 6 large egg yolks
- 1 cup (207g) sugar
- 1 ¼ cups (285g) mascarpone cheese
- 1 ¾ cups (420ml) heavy whipping cream, cold
- 1 package ladyfingers (17.5 ounce package)
- Freeze dried berries (optional)
- 1 ¼ cups (300ml) heavy whipping cream, cold
- ½ cup (58g) powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Step 1: Combine the strawberries, blueberries, raspberries, and ¾ cup sugar in a large bowl. Gently toss to coat the berries in sugar, cover, and refrigerate for 2 to 3 hours to allow juices to develop.
- Step 2: Drain the juice from the berries into a measuring cup. You should have at least 1 cup of juice; if not, let the berries sit longer. Add the amaretto (if using) and water to the juice to make 2 cups total liquid.
- Step 3: In a double boiler or metal bowl over simmering water, whisk together egg yolks and 1 cup sugar. Cook and whisk for about 5 minutes until the mixture thickens, becomes pale yellow, and reaches 160°F. Set aside to cool to slightly warmer than room temperature.
- Step 4: While the egg mixture cools, whip 1 ¾ cups cold heavy cream on high speed until stiff peaks form.
- Step 5: Gently fold mascarpone cheese into the cooled egg yolk mixture until combined. Then fold the whipped cream in two additions until smooth and fluffy.
- Step 6: Quickly dip each ladyfinger into the berry juice mixture for about 3 seconds. Arrange a single layer (about three rows of eight ladyfingers) in the bottom of a 9×13 inch pan.
- Step 7: Spread half of the mixed berries evenly over the ladyfingers, then spread half of the mascarpone cream over the berries.
- Step 8: Repeat the layers: dip ladyfingers and arrange another layer over the cream, add remaining berries, then top with the remaining mascarpone cream. Refrigerate for at least 3–4 hours or overnight.
- Step 9: Optional: Process freeze-dried berries into a powder and immediately sprinkle over the top of the chilled tiramisu to decorate.
- Step 10: Whip 1 ¼ cups cold heavy cream with powdered sugar and vanilla extract until stiff peaks form. Use this to decorate the tiramisu by spreading or piping as desired.
- Step 11: Serve chilled. Store leftover tiramisu well covered in the refrigerator and enjoy within 24–48 hours for best texture and flavor.
Tips & Variations
- Use amaretto for a subtle almond flavor, or omit for a non-alcoholic version.
- Freeze-dried berries add a beautiful color and tart garnish; fresh mint leaves also work well for decoration.
- Ensure the whipped cream is cold before whipping to achieve stiff peaks easier.
- If you prefer, soak ladyfingers for a shorter time to keep them firmer in the dessert.
Storage
Store leftover tiramisu covered tightly in the refrigerator. It is best enjoyed within 24 to 48 hours, as the ladyfingers will soften further and the dessert may become a bit mushy with extended storage. Reheat is not recommended; serve chilled.

- 1 ¾ cups (420ml) heavy whipping cream (cold)
Ladyfinger Layer

Whipped Cream Topping
- 1 ¼ cups (300ml) heavy whipping cream (cold)
- ½ cup (58g) powdered sugar
- 1 teaspoon vanilla extract
Optional Decoration
- Freeze-dried berries (for powdering)
Instructions
- Make Berries and Juice Mixture: Combine the strawberries, blueberries, raspberries, and sugar in a large bowl. Gently toss until all the fruit is coated with sugar. Cover and refrigerate for 2-3 hours to allow the berries to release their juices.
- Prepare Berry Juice: After refrigeration, drain the juice from the fruit into a measuring cup. You should have at least 1 cup of juice; if not, let the berries sit longer. Stir in the amaretto liqueur if using, then add water until you reach 2 cups total liquid.
- Make Mascarpone Cream Base: In the top of a double boiler or metal bowl set over simmering water, whisk together egg yolks and 1 cup sugar. Heat while whisking vigorously for about 5 minutes until the mixture thickens, doubles in volume, becomes pale yellow, and reaches 160°F. Let cool to just above room temperature.
- Whip Cream: While eggs cool, whip 1 ¾ cups of cold heavy cream in a large bowl on high speed until stiff peaks form.
- Combine Mascarpone Cream: Gently fold mascarpone cheese into the cooled egg mixture until smooth. Then, carefully fold in the whipped cream in two batches until fully incorporated. Set aside.
- Assemble Layer One: Quickly dip each ladyfinger into the berry juice mixture for about 3 seconds. Arrange a single layer (around 24 ladyfingers in three rows) in the bottom of a 9×13-inch pan.
- Add First Berry and Cream Layers: Spread half of the mixed berries evenly over the ladyfingers, then spread half of the mascarpone cream over the berries to create the first creamy layer.
- Assemble Layer Two: Repeat the dipping of ladyfingers in berry juice and lay a second ladyfinger layer on top. Follow with the remaining mixed berries and finish by spreading the rest of the mascarpone cream on top.
- Chill: Refrigerate the assembled tiramisu for at least 3-4 hours or preferably overnight to allow flavors to meld and the dessert to set.
- Prepare Topping and Decoration: If using freeze-dried berries, grind them in a food processor to make a powder and sprinkle evenly over the tiramisu just before serving. Whip together the remaining 1 ¼ cups heavy cream with powdered sugar and vanilla extract until stiff peaks form. Pipe or spread the whipped cream over the tiramisu as decoration.
- Serve and Store: Serve chilled. Store leftovers covered in the refrigerator, best consumed within 24-48 hours to maintain texture and flavor.
Notes
- The amaretto liqueur adds a delightful almond note but can be omitted for a non-alcoholic version.
- Ensure the egg yolk mixture reaches 160°F to ensure safety while maintaining a smooth texture.
- Dip ladyfingers quickly to avoid them becoming soggy; about 3 seconds is ideal.
- Freeze-dried berry powder adds a lovely vibrant color and intensified berry flavor for garnish.
- Consume within 2 days for best freshness; texture may become mushy if stored longer.
- Use cold heavy cream for best whipping results.
