Ingredients

Scale

Vegetables & Fruits

  • 1 small head green cabbage, finely shredded (about 67 cups packed)
  • 2 Granny Smith apples, cored and julienned
  • 1 large carrot, shredded

Dried Fruits

  • 1/4 cup dried cranberries
  • 1/4 cup golden raisins

Dressing

  • 1/4 cup lemon juice
  • 2 1/2 tablespoons apple cider vinegar
  • 1/4 cup olive oil
  • 4 1/2 tablespoons honey
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Combine ingredients: Place the finely shredded cabbage, julienned Granny Smith apples, and shredded carrot in a large mixing bowl. Add the dried cranberries and golden raisins to the bowl and gently toss to combine all the ingredients evenly.
  2. Whisk dressing: In a small bowl, whisk together the lemon juice, apple cider vinegar, olive oil, honey, salt, and freshly ground black pepper until the dressing is smooth and well blended. Taste and adjust the flavor by adding more lemon juice for tartness or honey for sweetness, if desired.
  3. Toss and chill: Pour the prepared dressing over the cabbage and fruit mixture. Toss thoroughly to coat all ingredients evenly with the dressing. Refrigerate the slaw for at least 15 minutes before serving to allow the flavors to meld together and the slaw to chill.

Notes

  • To keep the apples from browning, toss them immediately with the lemon juice before combining.
  • Chilling the slaw enhances the flavor melding but can be served immediately if needed.
  • You can substitute honey with maple syrup or agave nectar for a vegan option.
  • Adjust seasoning with salt and pepper according to your taste preferences.
  • For a crunchier texture, add chopped nuts like walnuts or pecans.
