  • 4 tbsp butter (salted or unsalted, softened)
  • 1 cup powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • Pink gel food coloring (optional)
  • Purple gel food coloring (optional)
  • Valentine’s Day sprinkles

Instructions

  1. Prepare the baking pan: Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper or foil for easy removal and set aside.
  2. Make the cookie batter: In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth and creamy using a mixer or by hand. Add the egg and 2 teaspoons of vanilla extract, mixing until fully combined.
  3. Add dry ingredients: Gradually mix in the all-purpose flour, baking powder, and salt just until the flour mixture is barely incorporated. Avoid overmixing to ensure a tender crumb.
  4. Bake the cookie base: Spread the batter evenly into the prepared baking pan. Bake in the preheated oven for 15 minutes. The center may look slightly underdone; this is expected as the bars will continue baking while cooling.
  5. Prepare the frosting: In a large bowl, whip the softened butter and powdered sugar together until combined. Add the heavy cream and 1 teaspoon vanilla extract, then whip the mixture until light and fluffy.
  6. Color the frosting: If desired, divide the frosting into two bowls. Add pink gel food coloring to one and purple gel food coloring to the other to create a marbled frosting effect.
  7. Frost the bars: Once the cookie layer has completely cooled, frost with alternating dollops of the pink and purple frosting. Use the back of a spoon or spatula to gently swirl the colors for a marbled look. Sprinkle Valentine’s Day sprinkles on top.
