Milk Soaking Mixture
- 1 (14-oz.) can sweetened condensed milk
- 1 (12-oz.) can evaporated milk
- 1/2 c. whole milk
- 1 tsp. pure vanilla extract
Whipped Cream Topping
- 2 c. heavy cream
- 1/2 c. (100 g) granulated sugar, divided
- 1 tbsp. cinnamon-sugar
For Serving
- Prepare the cake dry ingredients: Preheat your oven to 350°F (175°C) and grease a 13 x 9-inch baking pan with cooking spray. In a medium bowl, whisk together the flour, baking powder, and kosher salt to combine.
- Beat egg yolks and sugar: In a large bowl, use a handheld mixer on medium-high speed to beat the 5 large egg yolks with 1 cup of the granulated sugar until the mixture forms stiff ribbons trailing behind the beaters, then mix in the vanilla extract.
- Whip egg whites: In another large bowl, beat the egg whites on medium-high speed until soft peaks form. Gradually add the remaining 1/4 cup sugar and continue beating until stiff peaks form.
- Combine batter: Add the egg yolk mixture to the dry ingredients and beat until just combined. Then add the 1/2 cup whole milk and melted cooled butter, beating again until evenly mixed. Finally, gently fold in the beaten egg whites, taking care not to deflate the batter.
- Bake the cake: Pour the batter into the prepared pan and bake for about 30 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
- Prepare milk soak: In a medium bowl, whisk together the sweetened condensed milk, evaporated milk, 1/2 cup whole milk, and 1 tsp vanilla until smooth.
