Vinaigrette

  • 1 tbsp. red wine vinegar
  • 2 tsp. honey
  • 1/2 tsp. Dijon mustard
  • 3 tbsp. extra-virgin olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Mellow the Onion: Place the thinly sliced red onion in a medium bowl and cover it with ice water. Let it sit for about 10 minutes, stirring occasionally to mellow the sharp flavor. After soaking, drain the onion and pat dry with paper towels.
  2. Prepare the Vinaigrette and Marinate Tomatoes: In a large bowl, whisk together the red wine vinegar, honey, and Dijon mustard until well combined. While whisking constantly, slowly drizzle in the extra-virgin olive oil to create an emulsified dressing. Season the vinaigrette with kosher salt and freshly ground black pepper to taste. Add the wedge-cut tomatoes to the bowl and gently toss them to coat evenly with the dressing. Allow the tomatoes to marinate at room temperature for 5 minutes to absorb the flavors.
