  • 4 tbsp. boiling water
  • 1/4 cup crushed, toasted peanuts, for serving

Instructions

  1. Step 1: Place rice vermicelli noodles in a medium heatproof bowl and cover with boiling water. Let stand about 5 minutes or until just tender. Drain and use kitchen scissors to cut noodles into random lengths.
  2. Step 2: Meanwhile, poach the shrimp in salted boiling water until they turn pink and opaque. Rinse under cold water to stop cooking, then slice each shrimp in half lengthwise.
