Ingredients

Scale

Crunch Coating

  • 8 Golden Oreos
  • 1/2 cup crushed freeze-dried strawberries

Inner Strawberry Layer

  • 1/4 cup (or more) coconut flour, plus extra as needed
  • 1/4 cup crushed freeze-dried strawberries
  • 3 tablespoons (or more) whole milk plain Greek yogurt
  • 2 tablespoons almond, cashew, or other nut butter
  • 2 tablespoons heavy cream, plus extra as needed
  • 2 tablespoons maple syrup

Outer White Layer

  • 1 cup (or more) whole milk plain Greek yogurt
  • 1/2 cup (or more) coconut flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup heavy cream

Instructions

  1. Prepare the Crunch Coating: Place the Golden Oreos in a large resealable plastic bag and crush them thoroughly into fine crumbs using a rolling pin. Transfer the crumbs to a shallow dish, then add the crushed freeze-dried strawberries and mix until combined. Cover the dish with plastic wrap to keep the mixture from clumping.
  2. Make the Inner Strawberry Layer Dough: In a medium bowl, combine coconut flour, freeze-dried strawberries, Greek yogurt, nut butter, heavy cream, and maple syrup. Mix well until a dough forms that is moist enough to hold together when pressed. Adjust the texture by adding extra cream if too dry or adding more flour if too wet.
  3. Form Inner Strawberry Balls: Using a 1 teaspoon measuring spoon, portion the strawberry dough and roll each portion into small balls. Place them on a parchment-lined baking sheet and cover with plastic wrap to keep moist.
  4. Prepare the Outer White Layer Dough: In another medium bowl, mix together Greek yogurt, coconut flour, vanilla protein powder, and heavy cream until smooth and pliable. Ensure the dough is moist enough to hold together nicely; add more yogurt if too dry or more flour if too wet.
  5. Assemble the Protein Bites: Using a 1 tablespoon measuring spoon, portion the white dough onto a parchment-lined baking sheet. Flatten one portion of the white dough in your palm, place one small ball of the strawberry dough in the center, then wrap the white dough around it and roll to seal the edges fully.
  6. Coat with Crunch: Roll each assembled bite in the prepared strawberry crunch coating until fully covered.
  7. Chill to Set: Arrange the coated bites on a clean parchment-lined baking sheet, cover with plastic wrap, and refrigerate for at least 3 hours, or up to 1 day, until firm and cold.

Notes

  • If the doughs become too sticky, chill briefly for easier handling.
  • The protein powder can be substituted with any favorite flavor, but vanilla complements the strawberries best.
  • Freeze-dried strawberries add intense flavor without moisture, crucial for the right dough texture.
  • Use whole milk Greek yogurt for creaminess; low-fat options might alter texture.
  • Store finished bites refrigerated in an airtight container for up to 3 days for optimal freshness.
