Mascarpone Cream

Ladyfinger Layer

  • 48 ladyfingers
  • 2/3 cup triple sec

Strawberry Layer

  • 1 (13-oz.) jar strawberry jam
  • 3 tbsp. crushed freeze-dried strawberries

Instructions

  1. Prepare the Mascarpone Cream: In a large bowl of a stand mixer fitted with the whisk attachment or using a handheld mixer and a large bowl, beat the confectioners’ sugar and 3 cups of heavy cream on medium-high speed until medium peaks form, approximately 3 minutes. Carefully add the mascarpone cheese and beat until just combined; the mixture will loosen slightly.
  2. Soak the Ladyfingers: In a shallow dish or container that fits the ladyfingers, mix the triple sec and remaining 3 cups of heavy cream. Dip each ladyfinger quickly into the mixture on both sides just until softened but not soggy, about 30 seconds total.
  3. Assemble the Tiramisu: Line the bottom of a 13″ x 9″ baking dish with two rows of 12 soaked ladyfingers each, placed vertically to cover the base. Spread half of the mascarpone cream evenly over the ladyfingers. Loosen the strawberry jam by stirring if needed, then gently spread it over the mascarpone layer without mixing the two layers. Repeat the process with the remaining 24 ladyfingers and the rest of the mascarpone mixture.
  4. Chill: Cover and refrigerate the assembled tiramisu for at least 3 hours or up to overnight to allow the flavors to meld and the dessert to set properly.
  5. Garnish and Serve: Just before serving, sprinkle the top with the crushed freeze-dried strawberries for an added burst of flavor and color.
