Instructions

  1. Combine spices: In a medium bowl, mix together the finely minced garlic, grated ginger, superfine sugar, red chili flakes, Chinese five-spice powder, and chicken stock powder until evenly combined.
  2. Heat oil: In a small saucepan, warm the chili oil and vegetable oil over medium heat until the oils shimmer but do not smoke. Carefully pour the hot oil over the spice mixture in the bowl to infuse the flavors.
  3. Mix sauce: Slowly stir in the light soy sauce, rice vinegar, and warm water into the spiced oil mixture until well combined. Set this spicy chili sauce aside to allow the flavors to meld.
  4. Boil wontons: Bring a large pot of water to a boil. Add the fresh or frozen wontons and cook them until they float to the surface, about 4 minutes for fresh and 6 minutes for frozen, ensuring they are cooked through.
