This Southwest Chicken Salad is a vibrant and flavorful meal that’s perfect for lunch or dinner. Packed with seasoned chicken, fresh vegetables, and a creamy cilantro-lime dressing, it combines bold tastes with wholesome ingredients for a satisfying dish.

A white bowl filled with layers of colorful food items sits on a white marbled surface. Starting from the top left, there is a layer of grilled yellow corn kernels next to several thin slices of bright green avocado arranged neatly. To the right, there are small chunks of red bell pepper. Below the avocado and pepper, a layer of dark black beans is seen. A pile of green jalapeño slices sits in the center along with some chopped fresh cilantro leaves. The main center layer shows grilled chicken breast slices with a brown char, drizzled with a light green creamy sauce that also covers the avocado, corn, jalapeños, beans, and some yellow and orange cherry tomato halves peeking under the chicken. Thinly sliced red onions appear at the bottom left side. Two silver forks rest on the right of the bowl. Around the bowl, a jar of green sauce with a spoon and a halved lime add more color against the white marbled background. Photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • 1 ½ pounds chicken breasts (2 large breasts)
  • 2 tablespoons taco seasoning (store bought or homemade)
  • 2 teaspoons kosher salt
  • 2 tablespoons olive oil
  • 2 heads romaine (chopped)
  • 15.5 ounce can black beans (drained and rinsed)
  • 8 ounces corn
  • 1 pint cherry tomatoes (halved or quartered)
  • 12 ounces roasted pepper (chopped)
  • 1 large avocado (diced)
  • 1 small red onion (thinly sliced)
  • 1 medium jalapeño (optional)
  • ¼ cup cilantro (chopped)
  • 1 cup cilantro (packed, stems and leaves)
  • ½ small avocado
  • ½ cup plain Greek yogurt (or dairy-free yogurt)
  • 1 medium lime (juiced)
  • 1-2 cloves garlic
  • 1 teaspoon taco seasoning
  • 1 teaspoon kosher salt (more to taste)
  • 2 tablespoons water (more if needed to thin out dressing)

Instructions

  1. Step 1: Cut each chicken breast diagonally in half to create 4 pieces. Season the chicken evenly with kosher salt and taco seasoning.
  2. Step 2: Heat a large skillet over medium heat and add olive oil. Place the chicken pieces in the skillet, cover, and cook for 5 minutes. Flip the chicken and cook an additional 4-5 minutes, or until the internal temperature reaches 165°F. Remove from heat and let the chicken rest while it cools.
  3. Step 3: While the chicken cooks, prepare the vegetables: chop the romaine, halve or quarter the cherry tomatoes, slice the red onion thinly, dice the avocado, chop the roasted peppers, and optionally slice the jalapeño. Drain and rinse the black beans.
  4. Step 4: To make the dressing, combine the packed cilantro, half avocado, Greek yogurt, lime juice, garlic, taco seasoning, and kosher salt in a jar or blender. Blend until smooth. Add 1 tablespoon of water to thin the dressing, adding a second tablespoon if needed. Taste and adjust seasoning as desired.
  5. Step 5: Assemble the salad by layering chopped romaine at the base. Add black beans, corn, cherry tomatoes, roasted peppers, red onion, avocado, jalapeño, and chopped cilantro on top. Slice the rested chicken and arrange it over the salad. Drizzle with the cilantro-lime dressing and serve immediately.

Tips & Variations

  • For extra smoky flavor, use grilled chicken instead of skillet-cooked.
  • Swap black beans for pinto beans or kidney beans for variety.
  • Add shredded cheese or crispy tortilla strips for additional texture.
  • Omit jalapeño or deseed it if you prefer less heat.
  • Use dairy-free yogurt to keep the dressing vegan-friendly.

Storage

Store leftover salad and dressing separately in airtight containers in the refrigerator for up to 2 days. To reheat the chicken, warm gently in a skillet or microwave. Toss salad just before serving to keep the lettuce crisp.

How to Serve

A white plate holds a colorful layered salad starting with a base of green leafy lettuce. On the top left, there is a bright yellow layer of grilled corn kernels with slight char marks. Next to the corn, a fanned layer of sliced avocado shows a smooth light green texture sprinkled with red seasoning. In the center, grilled chicken breast slices with a golden brown char and white inside sit on the salad bed. On the right side, there are small diced red bell peppers and dark black beans. Below the beans are a few slices of fresh green jalapeno. At the bottom right, there are cut halves of orange and yellow cherry tomatoes. Thin slices of purple onion and fresh green cilantro leaves are visible around the chicken on the bottom left side. • 1 teaspoon taco seasoning
  • 1 teaspoon kosher salt (more to taste)
  • 2 tablespoons water (more if needed to thin out dressing)

Instructions

  1. Prepare the Chicken: Cut each chicken breast diagonally in half to create 4 pieces. Season liberally with 2 teaspoons kosher salt and 2 tablespoons taco seasoning, ensuring each piece is well coated.
  2. Cook the Chicken: Heat a large skillet over medium heat, add 2 tablespoons olive oil, and place the chicken pieces in the pan. Cover and cook for 5 minutes, then flip and cook for an additional 4-5 minutes, or until the internal temperature reaches 165°F (74°C). Remove the chicken and let it rest on a plate to cool slightly.
  3. Prepare the Salad Ingredients: While the chicken is cooking, chop the romaine, roast peppers, dice avocado, slice red onion and jalapeño if using, halve or quarter the cherry tomatoes, rinse and drain black beans, and measure out the corn and chopped cilantro.

Layer on the black beans, corn, cherry tomatoes, roasted peppers, diced avocado, red onion, jalapeño, and chopped cilantro. Slice the rested chicken into strips and add on top. Drizzle the cilantro-lime dressing over the salad evenly and serve immediately.

Notes

  • If you prefer a dairy-free option, substitute Greek yogurt with a plant-based yogurt of your choice.
  • For extra heat, keep the seeds in the jalapeño or add more slices.
  • Cook chicken thoroughly to an internal temperature of 165°F to ensure safety.
  • Make the dressing ahead and store in the refrigerator for up to 2 days.
  • This salad is great for meal prep; keep dressing separate until ready to eat to prevent sogginess.
