Hot Dogs and Toppings

  • 4 slices bacon

  • 4 bolillo-style buns or top-split hot dog buns
  • 1/2 cup refried pinto beans, warmed
  • 1/4 cup finely chopped tomato
  • Mayonnaise, for serving
  • Mustard, for serving

Instructions

  1. Wrap and Cook Hot Dogs: Tightly wrap each hot dog with a slice of bacon. Heat a large skillet over medium heat and cook the bacon-wrapped hot dogs, whole jalapeños, garlic cloves, and onion wedge. Turn occasionally until the bacon is crispy and cooked through, and the vegetables are lightly charred. This will take about 3 to 5 minutes for the garlic and 8 to 12 minutes for the hot dogs and vegetables. Once done, transfer everything to a plate and tent hot dogs with foil to keep warm.
  2. Prepare Jalapeño Salsa: Allow the charred vegetables to cool slightly until they are cool enough to handle. Remove stems and seeds from the jalapeños, then place jalapeños, charred onion, charred garlic, lime juice, cilantro, and 1/4 teaspoon kosher salt into a mini food processor. Pulse until a chunky salsa forms.
  3. Assemble the Hot Dogs: Spread a layer of warmed refried pinto beans inside each bolillo bun. Place a bacon-wrapped hot dog on top, then add chopped tomato and additional chopped onion. Spoon the prepared jalapeño salsa generously over the hot dogs, then drizzle with mayonnaise and mustard to taste. Serve immediately with remaining jalapeño salsa on the side.
