Ingredients

Scale

Shortbread Crust

  • 1/2 cup (1 stick) butter, softened
  • 3 tbsp powdered sugar
  • 1 tsp pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup crushed graham cracker, plus more for garnish
  • 1/4 tsp kosher salt

Caramel Layer

  • 1 (11-oz.) package caramel squares
  • 1/4 cup heavy cream

Marshmallow Layer

  • 1/2 cup (1 stick) butter
  • 3/4 cup marshmallow crème
  • 1/4 cup powdered sugar
  • Pinch kosher salt

Chocolate Topping

  • 1 cup semisweet chocolate chips
  • 2 tbsp butter
  • Flaky sea salt, for garnish

Instructions

  1. Preheat and prepare pan: Preheat the oven to 350°F (175°C) and line a 9″x5″ loaf pan with parchment paper to ensure easy removal of the bars after baking.
  2. Make shortbread crust: In a large bowl, beat together the softened butter and powdered sugar with a hand mixer until well combined. Add the vanilla extract and mix. Gradually add the all-purpose flour, crushed graham cracker crumbs, and kosher salt, mixing until the dough comes together. Press this dough evenly into the prepared loaf pan and bake for about 20 minutes or until the edges turn lightly golden. Remove from oven and let cool completely.
  3. Prepare caramel layer: In a small saucepan over medium-low heat, stir together the caramel squares and heavy cream until fully melted and smooth, about 5 minutes. Pour this warm caramel evenly over the cooled shortbread crust. Place the pan in the refrigerator to chill while preparing the next layer.
  4. Make marshmallow layer: In a large bowl, beat together the butter and marshmallow crème using a hand mixer until the mixture is light and fluffy. Add the powdered sugar and a pinch of kosher salt and continue to beat until smooth. Spread this marshmallow mixture evenly over the chilled caramel layer. Freeze the pan for 15 minutes to help set this layer.
  5. Prepare chocolate topping: Combine the semisweet chocolate chips and butter in a microwave-safe bowl. Microwave at half power in 30-second increments, stirring after each, until the chocolate is fully melted and smooth. Spread the melted chocolate evenly over the firm marshmallow layer.
  6. Garnish and chill: Sprinkle flaky sea salt and additional crushed graham cracker crumbs over the chocolate layer for added texture and flavor. Refrigerate the bars for about 30 minutes or until the chocolate topping is firm.
  7. Serve: Once set, remove the bars from the pan using the parchment paper overhang and slice into 2-inch wide strips. Keep the bars refrigerated until ready to serve for the best texture and flavor.

Notes

  • Be sure to let the shortbread base cool completely before adding the caramel to prevent melting the layers.
  • Microwave chocolate in increments to avoid scorching and ensure a smooth ganache.
  • Freeze the marshmallow layer first to keep the layers distinct and prevent mixing.
  • Store the bars refrigerated in an airtight container to maintain freshness and texture.
