Slow Cooker Sauce

  • 1 1/2 cups low-sodium chicken stock
  • 1 shallot, finely chopped
  • 4 cloves garlic, finely chopped
  • 3 thyme sprigs
  • 1 rosemary sprig
  • 2 tbsp. water
  • 2 tsp. cornstarch
  • 1/2 cup heavy cream
  • 2 tsp. finely grated lemon zest
  • 2 tbsp. fresh lemon juice

Instructions

  1. Season and Sear Chicken: Season the chicken breasts evenly with 2 teaspoons of kosher salt and 1/2 teaspoon of freshly ground black pepper. In a large skillet over medium-high heat, melt the butter. Arrange the chicken breasts in a single layer and cook for 2 to 3 minutes on each side until they are golden brown. This step locks in flavor and texture. Transfer the seared chicken to a 5-quart slow cooker.
  2. Add Stock and Herbs: Pour the chicken stock into the skillet used for searing and scrape up any browned bits from the bottom of the pan to capture extra flavor. Pour this stock over the chicken in the slow cooker. Add the finely chopped shallot, garlic, thyme sprigs, and rosemary sprig into the slow cooker. Cover and cook on high for 4 hours or low for 6 hours, until the chicken is very tender. Remove and discard the herb stems after cooking.
