Instructions

  1. Prepare the vegetable base: Pour half of the diced tomatoes into the slow cooker. Add half of the sliced bell peppers and onion, then sprinkle minced garlic evenly over the vegetables.
  2. Add the chicken: Place the boneless, skinless chicken breasts evenly over the vegetable layer in the slow cooker.
  3. Apply seasoning: In a small bowl, combine chili powder, ground cumin, smoked paprika, kosher salt, and black pepper. Sprinkle the spice mixture over the chicken, then flip the breasts to coat both sides evenly with the seasoning.
