Ingredients

Scale

Crust

  • 1 ½ cups Nilla Wafer Cookies, crushed
  • 2 tablespoons Brown Sugar
  • ½ cup Unsalted Butter, melted

Main Cheesecake Mixture

  • 32 oz Cream Cheese, room temperature (4 packages)
  • 1 cup Granulated Sugar
  • ⅔ cup Sour Cream
  • 1 ½ teaspoons Vanilla Extract
  • ¼ teaspoon Salt
  • 4 Eggs, room temperature, lightly whisked

Orange Swirl Mixture

  • 8 oz Cream Cheese, room temperature (1 package)
  • ¼ cup Granulated Sugar
  • ¼ cup Sour Cream
  • 1 Orange, juiced
  • 1 Egg, room temperature
  • Optional: A few drops of orange food coloring

Additional Layers and Topping

  • 1 cup Crushed Pineapple, well-drained
  • 1 cup Sour Cream
  • 1 tablespoon Granulated Sugar
  • ½ teaspoon Pineapple Extract
  • ½ teaspoon Vanilla Extract

Instructions

  1. Prepare the Crust: Preheat your oven to 350°F (175°C). Using a food processor, blend the Nilla Wafer Cookies until finely crushed. In a medium bowl, combine the cookie crumbs with melted butter and brown sugar, mixing until evenly moistened. Line a 9-inch springform pan with parchment paper on the bottom and spray the sides with non-stick spray. Press the crumb mixture firmly into the base and slightly up the sides of the pan to form the crust. Bake for 10 minutes, then remove from the oven and set aside.
  2. Make the Cheesecake Mixture: In a large bowl, beat the 32 oz cream cheese with 1 cup granulated sugar until completely smooth and creamy. Add the ⅔ cup sour cream, vanilla extract, and salt, and mix until combined. Slowly add the whisked eggs one at a time, mixing on low speed after each addition until just combined—be careful not to overmix to avoid incorporating too much air.
  3. Prepare the Orange Layer: In a separate bowl, beat the 8 oz cream cheese with ¼ cup granulated sugar until smooth and creamy. Add the ¼ cup sour cream, freshly squeezed orange juice, and 1 egg, mixing until well combined. Optionally, add a few drops of orange food coloring for a vibrant swirl effect.
  4. Assemble the Cheesecake: Thoroughly drain the crushed pineapple to remove excess liquid and spread it evenly over the baked crust. Pour half of the plain cheesecake batter over the pineapple layer and spread evenly. Drop spoonfuls of the orange mixture onto the plain cheesecake surface and use a knife or skewer to gently swirl the two batters together. Pour the remaining plain cheesecake mixture on top and smooth it out, then finish by swirling the remaining orange mixture on top. Lightly tap the pan on the counter to release any air bubbles.
  5. Bake the Cheesecake: Reduce the oven temperature to 325°F (163°C). Place the springform pan on a baking sheet and bake for 50 to 60 minutes, or until the center is mostly set but still slightly jiggles when gently shaken. Turn off the oven, crack the oven door open, and let the cheesecake cool inside the oven gradually for 1 to 2 hours to prevent cracking.
  6. Add Sour Cream Topping: In a small bowl, combine 1 cup sour cream, 1 tablespoon granulated sugar, pineapple extract, and vanilla extract. Mix until smooth. Spread this topping evenly over the cooled cheesecake.
  7. Chill and Serve: Refrigerate the cheesecake for at least 4 hours, preferably overnight, to fully set and develop flavors. Before serving, garnish with whipped cream, fresh orange slices, pineapple wedges, and mint sprigs for an elegant presentation. Slice, serve, and enjoy your tropical pineapple orange swirl cheesecake!

Notes

  • Make sure to drain the crushed pineapple thoroughly to prevent the crust from becoming soggy.
  • Use room temperature eggs and cream cheese to ensure a smooth, creamy batter and to prevent lumps.
  • Do not overmix after adding eggs to avoid incorporating too much air, which can cause cracks.
  • Cooling the cheesecake slowly in the oven helps prevent cracks on the surface.
  • For best flavor and texture, chill the cheesecake overnight before serving.
