Instructions

  1. Cook the guanciale: In a large, high-sided skillet set over medium-high heat, cook the chopped guanciale, stirring frequently, until the pieces are deeply golden and crisp, about 6 to 7 minutes. Remove the skillet from heat. Using a slotted spoon, transfer the guanciale pieces to a paper towel–lined plate to drain, leaving the rendered fat in the skillet. Add the freshly ground black pepper to the skillet and stir until fragrant, which will infuse the fat with pepper flavor.
  2. Boil the pasta: While cooking the guanciale, bring 4 cups of water to a boil in a medium pot. Season the boiling water with kosher salt. Add the spaghetti and cook it, stirring occasionally to prevent sticking, until the pasta is pliable but not fully al dente, approximately 2 to 3 minutes less than package instructions. Drain the pasta, reserving 2 1/2 cups of the pasta cooking water for the sauce.
  3. Prepare the sauce and combine: Return the skillet with the guanciale fat and black pepper to medium-low heat. Pour in 1 3/4 cups of the reserved pasta water and swirl to mix the fat and water, creating a base for the sauce. Add the drained pasta and a small handful of the grated Pecorino cheese, stirring to coat the pasta. As the cheese begins to melt, gradually add the remaining Pecorino cheese, stirring continuously and adding more pasta water as needed to achieve a silky, smooth sauce consistency. Continue cooking and stirring until the pasta is perfectly al dente. Remove the skillet from heat and fold in the crispy guanciale pieces gently to combine.
  4. Serve: Divide the pasta alla Gricia among serving plates. Top each portion with an additional sprinkle of Pecorino cheese for extra flavor. Serve immediately while hot.

Notes

  • Guanciale is a cured pork cheek, and it provides authentic flavor. If unavailable, pancetta can be used as a substitute but the flavor will differ slightly.
  • It is important to reserve pasta water as it helps to emulsify the sauce and keep it silky.
  • Do not overcook the pasta; it should be slightly undercooked before finishing in the sauce to absorb flavors and achieve perfect texture.
  • Use freshly grated Pecorino Romano cheese for best flavor and melting properties.
