  • 12 oz. no-boil lasagna noodles, broken into 2” to 3″ pieces
  • 3 cups pre-shredded mozzarella, divided
  • 3/4 cup finely grated Parmesan, divided
  • 15 oz. whole-milk ricotta cheese

Instructions

  1. Preheat and Brown Beef: Arrange a rack in the center of your oven and preheat to 375°F. In a large, high-sided skillet over medium-high heat, heat the olive oil. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned, about 7 to 9 minutes. Season with 1 tsp. kosher salt.
  2. Add Garlic and Basil: Stir in the finely chopped garlic and cook, stirring frequently, until fragrant, about 1 minute. Then add the fresh basil and stir until combined.
  3. Incorporate Sauce and Butter: Carefully pour in the marinara sauce to the skillet, watching for splatter. Stir in the unsalted butter until melted. Taste and adjust salt if needed.
  4. Simmer with Pasta and Cheese: Bring the sauce to a simmer, then add the broken no-boil lasagna noodles, 1 cup of mozzarella, and 1/4 cup of Parmesan cheese. Cook while stirring until the sauce is smooth and the pasta begins to soften, about 2 minutes. Remove the skillet from heat.
  5. Mix Ricotta and Cheese: In a small bowl, combine the ricotta cheese with the remaining 1/2 cup Parmesan.
  6. Layer Ricotta and Mozzarella: Dollop half of the ricotta mixture over the pasta in the skillet. Gently fold the pasta and sauce over the dollops to distribute without fully mixing. Add the remaining ricotta mixture in dollops on top, then evenly sprinkle with the remaining 2 cups of mozzarella cheese.
  7. Bake the Lasagna: Transfer the skillet to the oven and bake for 30 to 35 minutes until the edges are bubbly and golden brown spots appear on the top cheese layer. Let it rest briefly before serving.
