Instructions

  1. Melt Ingredients: Start by melting the peanut butter and coconut oil together in a small pot over low heat. Stir continuously until the mixture is smooth and combined, then add the coconut sugar, stirring until it dissolves. The mixture will be hot and nearly boiling, but avoid letting it boil.
  2. Add Chocolate: Remove the pot from the heat and add the chocolate chips. Stir until all the chocolate has melted and is fully incorporated. Then stir in the vanilla extract and salt to combine thoroughly.
  3. Mix Dry Ingredients: Add the oats and chia seeds to the pot and stir until all the dry ingredients are fully coated with the peanut butter and chocolate mixture. Let the mixture rest in the pot for 20 minutes to thicken and allow the chia seeds to absorb some moisture.
  4. Shape Cookies: Line a baking sheet with parchment paper or a silicone baking mat. Using a heart-shaped cookie cutter, scoop 2 to 3 tablespoons of the oat mixture into the center of the cutter. Flatten the mixture gently with the back of a spoon, then carefully remove the cookie cutter. Repeat until all the mixture is shaped into cookies. Optionally, add pink sprinkles on top for a festive Valentine’s touch.
