  • Assorted sliced fresh fruit (such as berries, kiwi, mango, or peaches)
  • Optional topping: 2 Tablespoons apricot preserves mixed with 1 Tablespoon water

Instructions

  1. Prepare the pan: Spray the bottom of a 9-inch tart pan, cake pan, or pie dish with nonstick spray and line it with a parchment paper circle slightly larger than the pan. This prevents sticking and helps when pressing the crust.
  2. Soak the dates: Soak the pitted Medjool dates in warm water for 10 minutes to soften, then drain and cut them in half to prepare them for processing.
  3. Make the crust dough: In a food processor or blender, pulse the soaked dates, cashews, and almonds together until a sticky, thick dough forms with nuts broken up evenly. Press this dough evenly into the prepared pan, up the sides partially, creating a firm crust.
  4. Assemble the tart: Spread the Greek yogurt evenly over the nut and date crust, creating a smooth layer. Arrange the sliced fresh fruit decoratively on top of the yogurt layer.
  5. Optional glossy finish: Mix the apricot preserves with water and gently brush this glaze over the fruit to give a shiny, attractive finish and added flavor.
  6. Serve or store: Slice and serve the tart immediately, or cover and refrigerate for up to 1 day before serving. Leftover tart can be stored in the fridge for up to 3 days.
