Instructions

  1. Combine dry ingredients: In a large bowl, mix together the vanilla wafer crumbs and powdered sugar until fully blended.
  2. Add wet ingredients: Stir in the corn syrup and Baileys Irish Cream thoroughly. The mixture will become crumbly but should hold together when pressed.
  3. Form cookie balls: Using about 1 tablespoon of the mixture for each, roll and shape the dough into balls with your fingertips. If the dough gets sticky, dust your fingers lightly with powdered sugar to make shaping easier. Set the balls aside on a flat surface.
  4. Melt candy coating: Place the candy melts in a microwave-safe bowl and melt in short increments of 15 to 45 seconds, stirring in between until smooth and fully melted.
