  • 2 lbs boneless, skinless chicken breast (46 thin chicken breasts)
  • 1/2 tbsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional)

For the Corn Topping:

  • 3 cups sweet corn (2 cans, drained)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 tbsp lime juice
  • 1 1/2 tsp chili powder
  • 1/4 cup crumbled queso fresco
  • 1/4 cup chopped cilantro

Instructions

  1. Prepare the Corn Topping: In a large bowl, combine the sweet corn, mayonnaise, sour cream, lime juice, and chili powder. Mix well to combine.
  2. Cook the Chicken: Preheat oven to 350˚F. Place the thin chicken breasts in a casserole dish. Season with salt, garlic powder, and cayenne pepper. Spread the corn mixture over the chicken.
  3. Bake: Bake uncovered for 30-40 minutes or until the chicken reaches an internal temperature of 165˚F.
  4. Finish: Remove from the oven and top with crumbled queso fresco and chopped cilantro.
