Ganache
- 2 cups (240 g) white chocolate chips
- 2 tablespoons coconut oil
- Freeze Cookie Dough: Portion the edible cookie dough into 1-tablespoon scoops on a parchment-lined baking sheet, yielding 18 total scoops. Place the dough in the freezer until very firm, about 10 to 15 minutes.
- Prepare Oreos: Separate the mini Oreos and carefully scrape off the frosting using a small utensil. Set Oreo halves aside for assembling the ‘hats.’
- Melt Ganache: In a medium heatproof bowl, microwave the white chocolate chips and coconut oil in 15-second increments, stirring between each, until the mixture is melted and smooth, approximately 45 seconds to 1 minute.
- Create Ganache Bases: Spoon 18 rounds of ganache, about 1 inch in diameter each, onto another parchment-lined baking sheet. These ganache rounds will serve as the bases for the cookie dough bites. Reserve remaining ganache for dipping and assembling.
- Assemble Hats: Dip the smaller end of each Rolo candy into the remaining ganache. Attach the dipped end to the flat side of an Oreo half to form a snowman hat. If using, dip each snowflake sprinkle into ganache and attach it at the rim where the Oreo meets the Rolo candy.
- Dip and Decorate Snowmen: Roll each frozen cookie dough scoop into a smooth ball. Using a fork, dip one ball into the ganache to fully coat it, then gently press it onto a ganache round on the baking sheet.
