  2. Step 2: Whisk together the dressing ingredients—80 ml olive oil, 2 tbsp lemon juice, ½ tsp dried mint, ½ tsp sumac, 1 tsp sea salt, and ½ tsp black pepper—in a small bowl.
  3. Step 3: In a large serving bowl, combine the gem lettuce, cherry tomatoes, capsicum, cucumbers, radishes, and red onion. Top with parsley and pomegranate seeds if using, then drizzle with the dressing. Finish by adding the pita crisps on top.
