Instructions

  1. Prepare Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, kosher salt, and baking soda until evenly combined. This ensures that your dry ingredients are well mixed and will incorporate smoothly with the wet ingredients.
  2. Mix Wet Ingredients: In a large bowl, whisk the packed light brown sugar and melted, cooled unsalted butter until smooth and creamy. Add the large Eggland’s Best egg, the additional egg yolk, and pure vanilla extract, whisking until everything is thoroughly combined and the mixture is smooth.
  3. Combine Dough: Gradually add the dry ingredients to the wet ingredients, stirring gently with a rubber spatula until the dough is just combined. Careful not to overmix. Then fold in the kettle corn, salted roasted peanuts, and dark chocolate chips gently until distributed evenly. Cover the bowl and refrigerate the dough until firm, for at least 2 hours and up to 12 hours, to make it easier to scoop and maintain cookie shape during baking.
  4. Preheat Oven and Prepare Baking Sheets: Arrange oven racks in the upper and lower thirds of the oven and preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking and ensure even baking.
