Instructions

  1. Roast Peppers: Preheat your oven to 400°F (205°C). Halve the red bell peppers and remove all seeds and membranes. Place the pepper halves cut-side down on a baking sheet and roast in the oven for 20 to 30 minutes, or until their skins blister and darken.
  2. Steam and Peel Peppers: Remove the roasted peppers from the oven and immediately cover them with foil or invert a bowl over them to trap the steam. Let them steam for 10 minutes, which helps loosen the skins. After steaming, peel off the skins carefully. You may peel them under cold running water if needed, ensuring to pat them dry afterward to remove excess moisture.
  3. Blend Dip: In a food processor, combine the peeled roasted peppers, crumbled feta cheese, extra-virgin olive oil, lemon juice, dried chili flakes, garlic clove, salt, and black pepper. Blend until the mixture is smooth and creamy. Taste and adjust seasoning with additional salt, pepper, or chili flakes if desired.
