For the Fried Bread

- 4 bread slices, cut into 2 diagonal pieces

For the Whipped Ricotta
- 16 oz whole milk ricotta (such as Luizi)
- 1 small garlic clove, grated
- 1 tsp kosher salt, divided
- 1 tbsp extra-virgin olive oil (remaining after frying)
For Garnish
- 3 tbsp hot honey
- 1 tsp coarsely chopped fresh rosemary
- Fry the Bread: Heat 4 tablespoons of extra-virgin olive oil in a large skillet over medium-high heat. Carefully place the bread pieces in the oil and fry, reducing the heat to medium if the bread begins to brown too quickly. Fry each side for 1 to 2 minutes until golden brown and crispy. Remove and place the bread on a paper towel-lined plate to drain excess oil. Repeat the frying process with the remaining 1 tablespoon of olive oil and the remaining bread slices. Immediately sprinkle the fried bread with 1/4 teaspoon of kosher salt.
- Whip the Ricotta: In a food processor, combine the ricotta cheese, grated garlic, and 3/4 teaspoon kosher salt. Blend until smooth and creamy. With the processor running on low speed, slowly stream in the remaining 1 tablespoon of olive oil, allowing the ricotta to become light and whipped.
- Assemble and Serve: Transfer the whipped ricotta to a serving bowl. Using the back of a spoon, create swirls and dollops for an attractive presentation. Generously drizzle the hot honey over the whipped ricotta, and sprinkle with the chopped fresh rosemary for an aromatic finish. Serve immediately with the fried bread slices on the side for dipping.
