  • 4 ears of corn, shucked

For the Honey-Lime Butter

  • 1/2 cup (1 stick) unsalted butter, softened to room temperature
  • 1 jalapeño, seeded and finely chopped
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons honey
  • 1 tablespoon chopped fresh oregano
  • 1 teaspoon finely grated lime zest
  • 2 teaspoons fresh lime juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper

Instructions

  1. Prepare the Grill: Heat your gas or charcoal grill to medium-high heat, about 5 minutes after cleaning and oiling the grates. Alternatively, heat a grill pan over medium-high heat if a grill is unavailable.
  2. Grill the Corn: Place the shucked corn directly on the grill or grill pan. Rotate the ears frequently to ensure all sides develop a nice char, cooking for about 18 to 20 minutes until evenly grilled.
  3. Make the Honey-Lime Butter: While the corn grills, combine softened butter, finely chopped jalapeño, minced garlic, chopped cilantro, honey, fresh oregano, lime zest, lime juice, kosher salt, and black pepper in a small bowl. Whisk until well blended.
  4. Coat Corn with Butter: Transfer the grilled corn to a 13″ by 9″ baking dish. Spread approximately 1 tablespoon of the honey-lime butter evenly over each ear while warm.
  5. Rest and Serve: Cover the baking dish with foil and let the corn sit for 5 minutes to absorb the flavors. Serve immediately with the remaining honey-lime butter on the side for extra flavor.
