Honey-Garlic Glaze

  • 1/3 cup honey
  • 1/4 cup reduced-sodium soy sauce
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon crushed red pepper flakes

Salmon & Cooking

  • 3 tablespoons extra-virgin olive oil, divided
  • 4 (6-ounce) salmon fillets, patted dry with paper towels
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 3 garlic cloves, minced
  • 1 lemon, thinly sliced into rounds

Instructions

  1. Prepare the glaze: In a medium bowl, whisk together the honey, reduced-sodium soy sauce, fresh lemon juice, and crushed red pepper flakes until well combined. Set aside.
  2. Sear the salmon: Heat 2 tablespoons of extra-virgin olive oil in a large skillet over medium-high heat. When the oil is hot but not smoking, place the salmon fillets in the skillet skin side up. Season them with kosher salt and freshly ground black pepper. Cook the salmon without moving until the flesh is just heated through and seared, approximately 2 minutes.
  3. Flip and glaze the salmon: Carefully flip the salmon fillets skin side down, then add the remaining 1 tablespoon of olive oil to the skillet. Add the minced garlic and cook, stirring gently, until fragrant, about 1 minute. Pour in the prepared honey mixture and add the lemon slices. Cook the salmon while occasionally basting it with the sauce, allowing the glaze to reduce by about one-third, roughly 3 minutes. The salmon should be cooked through and nicely coated with the glaze.

  • Patting the salmon dry before cooking helps achieve a better sear.
