Instructions

  1. Simmer the soup base: In a large 5- to 6-quart pot, combine the chicken leg quarters or breasts, chopped onion, sliced celery, carrots, minced garlic, chicken bone broth, and thyme sprigs. Bring the mixture to a simmer over medium-high heat. Once simmering, reduce the heat to medium and continue to simmer briskly, stirring occasionally, until the liquid has slightly reduced, about 15 to 20 minutes.
