Instructions

  1. Boil Potatoes: In a large pot, cover the creamer potatoes with cold water and generously season with kosher salt. Bring to a boil and cook until the potatoes are just tender and a knife pierces through with little resistance, about 15 to 20 minutes. Drain the potatoes and let them cool slightly.
  2. Prepare Potatoes for Grilling: Transfer the potatoes to a cutting board and slice each in half lengthwise. Place the potato halves into a medium bowl and add 3 tablespoons of olive oil. Toss the potatoes gently to coat them evenly with the oil.
  3. Grill Potatoes: Preheat a grill to medium-high heat for about 5 minutes, or heat a grill pan over medium-high heat. Place the potatoes cut side down on the grill and cook undisturbed until char marks develop, about 5 to 7 minutes.
  4. Make Dressing and Toss Salad: In a large bowl, whisk together the fresh lemon juice, 4 ounces of crumbled feta, 1 teaspoon of kosher salt, and the remaining 5 tablespoons of olive oil until well combined. Stir in the finely chopped fresh dill. Add the grilled potatoes to the bowl and toss gently to coat the potatoes in the dressing and herbs.
