Green Grape Sorbet

  • 1 lb. cotton candy or green muscat grapes (about 3 1/2 cups)
  • 2 tbsp. (or more) light agave syrup
  • 1/8 tsp. fresh lemon juice
  • 1/4 cup water

Red Grape Sorbet

  • 1 lb. red raisin grapes (about 3 1/2 cups)
  • 1/3 cup 100% juice concord grape concentrate, thawed

Instructions

  1. Prepare Grapes: Wash and rinse both the green and red grapes thoroughly, then remove all stems. Spread the grapes out evenly on two separate parchment-lined baking sheets, one for the green grapes and one for the red grapes, ensuring the sheets are small enough to fit in your freezer. Freeze the grapes for at least 6 hours, preferably overnight, until completely frozen.
  2. Process Green Grapes: Transfer the frozen green grapes to a food processor. Keep the red grapes frozen for now. Add the light agave syrup and 1/4 cup of water to the processor. Pulse the mixture for about 30 seconds until it reaches a fairly smooth texture. Scrape down the sides of the bowl, taste, and add more agave syrup if sweeter sorbet is desired. Add the fresh lemon juice and pulse for another 30 seconds or until smooth. Transfer this green grape sorbet base to a medium bowl.
  3. Process Red Grapes: Clean the food processor bowl to avoid mixing colors. Then, add the frozen red grapes and the thawed concord grape concentrate. Pulse for around 30 seconds until the mixture is mostly smooth. Scrape down the sides and pulse again until the texture is smooth and creamy.
  4. Serve or Freeze: You can serve the sorbet immediately for a soft-serve consistency. Alternatively, for a firmer and more traditional sorbet texture, portion each sorbet into separate freezer-safe containers and freeze for at least 3 additional hours before scooping.
  5. Make Ahead: The sorbet can be prepared up to 30 days in advance. Ensure it stays frozen until ready to serve.
