These Festive Turkey Flatbreads are a delightful and easy-to-make snack perfect for using up holiday leftovers.   • 200g self-raising flour
  • 170g Greek yogurt

Filling

  • 4 tbsp cranberry sauce
  • 100g brie, chopped into small pieces
  • 8 tbsp leftover turkey, chopped into small pieces

Instructions

  1. Make the dough: In a large bowl, combine the self-raising flour and Greek yogurt with a spoon until a shaggy dough forms. Knead gently for 1 minute, then wrap in plastic wrap and set aside while you prepare the filling ingredients.
  2. Prepare the dough pieces: Remove the dough from the wrap and knead again for 30 seconds until soft and bouncy. Slice the dough into 4 equal pieces and roll each piece into a circular wrapper just under 1cm thick.
  3. Add the fillings: Place a spoonful of cranberry sauce in the center of each wrapper, spreading gently but keeping it away from the edges. Top with 4-6 pieces of chopped brie and 2 tablespoons of chopped turkey on each flatbread.
  4. Seal the parcels: Bring all the corners of the dough circles to the center and pinch them together to seal the parcels. Turn each parcel over and gently flatten it down.
  5. Roll flatbreads: Use a rolling pin to gently roll each sealed parcel into a flatbread, being careful not to let the dough burst. If it does slightly, it’s not a problem.
  6. Cook the flatbreads: Heat a pan over low to medium heat. Place the flatbreads in the dry pan (no oil needed) and dry fry each side for about 3 to 6 minutes until they are golden and cooked through.
  7. Serve: Once cooked, serve the flatbreads warm and enjoy the festive blend of flavors.

  • If the dough tears slightly when rolling, simply patch it up and continue; the dough is forgiving.
  • No oil is needed to fry the flatbreads, making them lighter and less greasy.
