Pudding Mixture

  • 2 (5.1-oz) boxes instant vanilla pudding mix
  • 2 1/2 cups eggnog
  • 1/4 cup spiced rum

Topping

  • 3 cups whipped topping, such as Cool Whip
  • 1/2 teaspoon ground cinnamon
  • Pinch nutmeg

Instructions

  1. Prepare the cake base: Preheat your oven to 350ºF and grease and flour a 9″ x 13″ cake pan to prevent sticking. Prepare the vanilla cake mix according to the package instructions, then pour the batter evenly into the prepared pan. Bake in the preheated oven for 26 to 28 minutes, or until a toothpick inserted into the center comes out clean. Once baked, allow the cake to cool for about 10 minutes.
  2. Make the pudding mixture: While the cake is baking and cooling, whisk together the two boxes of instant vanilla pudding mix with 2 1/2 cups of eggnog and 1/4 cup of spiced rum in a bowl. Whisk thoroughly until the mixture thickens, then set it aside.
  3. Poke and fill: Using the bottom of a wooden spoon, gently poke holes all over the warm cake to allow the pudding mixture to seep in. Pour the thickened pudding mixture evenly over the cake, spreading it to cover all the holes and surfaces.
