  • 1 and 1/2 teaspoons ground cinnamon
  • 1 and 1/2 teaspoons store-bought or homemade pumpkin pie spice*

Instructions

  1. Preheat Oven: Adjust the oven rack to the lower-middle position and preheat the oven to 350°F (177°C).
  2. Make the Crust: Using a food processor, pulse the gingersnap cookies into crumbs. In a medium bowl, stir together the cookie crumbs, ground ginger, ground cinnamon, granulated sugar, and melted butter until combined.
