Ingredients

Scale

Main Ingredients

  • 2 pounds ground beef
  • 1/2 onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 tsp minced garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp Italian Seasoning
  • 2 cans (14.5 oz each) tomato sauce
  • 2 cans (14.5 oz each) diced tomatoes
  • 2 cups beef broth
  • 1 box dry uncooked macaroni (about 12 ounces)
  • 1 cup frozen peas

Instructions

  1. Cook the Meat: In a skillet over medium heat, brown the ground beef completely. Drain any excess fat to avoid greasiness.
  2. Sauté Aromatics: Add diced onions and diced green and red bell peppers to the skillet with the beef. Cook until the vegetables are tender and fragrant.
  3. Load the Slow Cooker: Transfer the cooked meat and vegetable mixture into a 6-quart slow cooker, evenly spreading it out.
  4. Add Seasonings and Liquid: Mix in minced garlic, Italian seasoning, salt, pepper, tomato sauce, diced tomatoes, and beef broth into the slow cooker with the meat mixture.
  5. Stir and Cook: Stir all ingredients together until well combined. Cover with the slow cooker lid and cook on HIGH for 3.5 hours to develop deep flavors.
  6. Prepare the Pasta: About 1 hour before serving, cook the macaroni according to the package directions on the stovetop. Drain the pasta well once cooked.
  7. Combine: Thirty minutes prior to serving, stir the cooked pasta and frozen peas directly into the slow cooker to warm through and allow flavors to meld.
  8. Rest and Serve: Cover the slow cooker again and let the goulash sit for the final 30 minutes to ensure peas are heated and pasta absorbs the sauce. Garnish as desired and serve hot.

Notes

  • Draining the ground beef after browning reduces excess fat for a healthier dish.
  • Cooking the pasta separately prevents it from becoming mushy in the slow cooker.
  • You can substitute ground turkey or chicken for a leaner protein option.
  • Add a sprinkle of shredded cheese on top before serving for extra richness.
  • Leftovers refrigerate well and taste even better the next day.
