Instructions

  1. Prepare the Cheesy Corn Filling: In a large bowl, combine the corn kernels, shredded mozzarella, and softened cream cheese. Add garlic powder, onion powder, paprika, salt, and pepper. Mix thoroughly until the mixture is sticky and well combined. If the mixture feels too loose to shape, refrigerate it for 30 minutes to firm up.
  2. Shape the Sticks: Divide the chilled mixture into equal portions. Roll each portion carefully into a cylindrical shape about 3–4 inches long. Insert a wooden skewer into each stick to facilitate handling. Arrange the shaped sticks on a parchment-lined tray and freeze for at least 30 minutes to help them hold together during frying.
  3. Coat the Sticks: Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with dried parsley or oregano. Roll each frozen corn-cheese stick first in the flour, shaking off excess, then dip into the beaten eggs, and finally coat in the breadcrumb mixture. For extra crispiness, dip the sticks again in eggs and breadcrumbs to double-coat them.
