Instructions

  1. Prepare the Pan Base: If you’ve just cooked your protein (chicken, steak, tofu), keep the same pan to retain those flavorful browned bits. Turn off the heat and let it cool for 1–2 minutes to avoid burning. If starting fresh, use a clean heavy-based pan over medium heat. Add the butter, then stir in the garlic, green peppercorns (if using), and freshly cracked black pepper. Cook for 30 seconds until aromatic.
  2. Deglaze with Wine: Add the white wine (if using) and scrape up any browned bits from the pan bottom. Cook for 2–3 minutes until the wine is reduced by at least half, intensifying flavor.
  3. Add and Reduce Stock: Pour in the beef, chicken, or vegetable stock and let it simmer for 2–3 minutes until reduced by half, concentrating the sauce base.
  4. Incorporate Cream and Seasonings: Stir in the thickened cream, Dijon mustard, and Worcestershire sauce. Allow to simmer gently for 5–6 minutes, ensuring a light bubble to thicken without boiling aggressively.
  5. Finish and Serve: Taste and season with sea salt flakes as needed. Pour the creamy peppercorn sauce generously over your cooked steak, fries, chicken, or vegetables. Serve with extra cracked black pepper on the side for added kick.
