Instructions

  1. Sauté Vegetables: Melt the butter in a large pot or Dutch oven (4-quart or larger) over medium heat. Add the chopped onion, carrots, celery, and minced garlic. Cook, stirring occasionally, for about 5 minutes or until the vegetables soften.
  2. Add Seasonings and Flour: Stir in the all-purpose flour, salt, pepper, dried thyme, and oregano. Continue cooking for 2 minutes to cook out the flour and release the aromas of the herbs.
  3. Add Broth and Potato: Pour in the chicken broth and add the diced potato. Stir quickly to combine, then raise the heat to medium-high and bring the soup to a boil. Boil uncovered for 3 minutes without stirring.
  4. Simmer Soup: Reduce the heat to medium-low, cover partially, and let the soup simmer gently for 25 minutes or until the potatoes are tender. Taste and adjust seasoning as needed.
  5. Add Chicken, Milk, and Noodles: Stir in the cooked chicken, half-and-half or whole milk, and uncooked wide egg noodles. Cook for about 10 minutes until the noodles are tender and the soup has thickened. Taste again and adjust salt or pepper if desired.
