Ingredients

Scale

Dough Ingredients

  • 1 cup (240ml) whole milk
  • 2/3 cup (135g) granulated sugar
  • 1 and 1/2 tablespoons Platinum Yeast from Red Star instant yeast (2 standard size packets)
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature and cut into 4 pieces
  • 2 large eggs, at room temperature
  • 1/2 teaspoon salt
  • 4 and 1/2 cups (563g) all-purpose flour (spooned & leveled), plus more for hands/work surface

Filling Ingredients

  • 6 Tablespoons (85g) unsalted butter, softened to room temperature
  • 1/2 cup (100g) granulated sugar
  • 1 and 1/2 Tablespoons ground cinnamon

Icing Ingredients

  • 1 cup (120g) confectioners’ sugar
  • 1/2 teaspoon pure vanilla extract
  • 2 Tablespoons (30ml) milk

Instructions

  1. Prepare the dough: Heat the milk to about 95°F (35°C) using a microwave or stovetop. Pour the warm milk into a stand mixer bowl fitted with a dough hook. Whisk in the sugar and yeast, then cover and let the yeast proof until foamy, about 5-10 minutes. If not foamy, restart with fresh yeast.
  2. Mix dough ingredients: Beat in softened butter on low speed until slightly broken up. Add eggs one at a time, then salt. Gradually add flour on low speed. Once combined, increase mixer speed to medium and beat until soft dough forms. Then increase to medium-high speed and beat for about 6 more minutes until dough is soft and supple.
  3. Knead the dough: Continue kneading in mixer for 5 minutes or knead by hand on a floured surface for 5 minutes. If dough is sticky, lightly sprinkle small amounts of flour without making dough dry. Check dough softness by poking or performing a windowpane test for gluten development.
  4. First rise: Shape dough into a ball and place it in a lightly greased bowl. Cover loosely with plastic wrap or a towel. Place in a warm spot (like a turned-off oven preheated to 200°F) and let rise until doubled in size, about 1-2 hours.
  5. Shape dough for filling: Line a large baking sheet with lightly floured parchment paper. Pat dough into a roughly 10×20-inch rectangle, smoothing it evenly.
  6. Prepare and spread filling: Spread softened butter evenly over the dough. Mix cinnamon and sugar in a small bowl and sprinkle evenly over buttered dough.
  7. Roll and cut dough: Tightly roll the dough into a 20-inch long log. Using kitchen shears or a knife, cut 20 slices about 1 inch thick, slicing only 3/4 through so rolls remain connected at the bottom.
  8. Form the wreath: Arrange rolls into a circle on the baking sheet, overlapping each slightly. Place a ramekin or small bowl in the center to support shape.
  9. Second rise: Cover wreath loosely with plastic wrap. Let rise again in a warm spot until puffy, approximately 45 minutes to 1 hour.
  10. Bake: Preheat oven to 350°F (177°C). Bake wreath for about 25 minutes until rolls are golden brown. Remove from oven and cool for 10 minutes.
  11. Make icing: Whisk confectioners’ sugar, vanilla extract, and milk together until smooth. Drizzle icing evenly over the warm wreath before serving.

Notes

  • Use room temperature ingredients for best yeast activation and dough texture.
  • Proof the yeast properly to ensure dough rises well.
  • When kneading by hand, avoid adding too much flour to keep dough soft.
  • The ramekin or bowl in the center helps maintain the wreath shape during baking.
  • Allow the cinnamon roll wreath to cool slightly before icing to prevent icing from melting off.
  • Store leftovers covered at room temperature up to 2 days or freeze for longer storage.
